The heat- and pressure-induced unfolding of the glycosyl-ated and unglycosylated forms of mature carboxypeptidaseY and the precursor procarboxypeptidase Y were analysedby differential scanning calorimetry and/or by their intrinsicfluorescence in the temperature range of 20–75Corthepressure range of 0.1–700 MPa. Under all conditions, theprecursor form showed a clear two-state transition from afolded to an unfolded state, regardless of the presence of thecarbohydrate moiety.
